Why not cook double the quantity and freeze some for later in the week, when you're too busy to cook a fresh meal?

It's a good way of preserving bulk bought fresh ingredients and save on cooking time as well as saving you money on take-out meals.

If a once a month "cook-off" is too daunting a concept, do it once a week or a couple of times a week.
